dc.descriptionThis study investigates demographic, socioeconomic and food attributes factors contributing to the consumption of fresh and processed (jarred/canned) mushrooms. The double-hurdle model is employed to analyze the data. Awareness of mushroom health benefits, mushroom’s attributes, income, household size, race and age are significant determinants of the mushroom consumption.
