The objective of this research was to identify the variables that influence on organic food consumption. A survey was given to a non-probabilistic sample of 425 consumers in Talca and Curicó cities, Region of Maule. A binary logistic regression was performed to identify the main variables to the population. The results show that organic foods knowledge; health life style; to know organic agriculture benefits and family income are the most important variables (p < 0,05). This information is relevant for the value chain actors to develop the domestic market on the Region of Maule.
