The article discusses the issue of food safety and food quality. Starting from the Food Risk Matrix
analyzed issues such as the location of food safety and quality in the risk matrix concept, the state of food
quality on the Polish market in the years 2005-2013 and the actions taken at the EU aimed to build on the
anti-adulteration and food fraud system.
