Descripción
El estudio se realizó en 1984, en los Laboratorios de Farinología del ICA-Tibaitatá y de Ia Estación Experimental de Patacamaya (Bolivia), con el objeto de determinar el porcentaje de extracción de harinas de las diferentes variedades de quinua cultivadas en Bolivia, Colombia y Perú, donde esta especie se cultiva a alturas superiores a los 3.000 m.s.n.m. Los resultados obtenidos respecto al tamaño, peso y dureza del grano mostraron diferencias significativas (Duncan a = 0.05), 10 mismo que los porcentajes de extracción de harina y salvado ( a = 0.05). Así, el mayor rendimiento en harina se observó en Ia variedad Sajama 153 con un valor de 77%, seguido de las variedades Real y Pantela con valores de 71.79 y 71.29%, respectivamente, mientras que en contenido de salvado los valores más altos fueron para las variedades IQ-579 y Saihua Rosada 17 con 65.75 y 60.40%, respectivamente. En el color y finura de Ia harina, y en características relacionadas con el color del grano, también se observaron diferencias entre las variedades.
This research was carried out at the quality Laboratories of the CNI Tibaitata and the Experimental Station of Patacamaya (Bolivia). The study was conducted to determine the percentage of flour extraction in different cultivars of quinua growed in andean countries such as Bolivia, Colombia and PerU. The quinua crop is important because it is cultivated in places located over 3.000 m.a.s.l. Five traits: size, weigth and hardness of the kernel, percentages of flour extraction, and bran showed significant differences (Duncan a = 0.05). The Sajama 153 cultivar had the greatest flour yield, 77%, followed by Real and Pantela with values of 71.79 and 71 .29%, respectively. The cultivars IQ-579 and Saihua Rosada 17 had the greatest bran content 65.75 and 60.40%, respectively. The flour color and finess characteristics related with the grain color also showed differences between varieties.
