The objective of this research is to analyse the food consumption patterns and to conduct econometric analysis of the food demand structure in Japan. The study pays special attention to the question of whether or not rice is an inferior food as previous researchers have claimed and to what extent Japanese food consumption patterns have been Westernized and uses the cross-sectional household data, 1997 Annual Report on the Family Income and Expenditure Survey (FIES), compiled by the Statistics Bu reau, Management and Coordination Agency in Japan.
