In January 2020, the World Health Organization (WHO) declared the outbreak of a new coronavirus disease in Hubei Province, China, a public health emergency of international concern. FAO is assisting the meat and dairy sector in target countries in Central Asia and Georgia by introducing measures to ensure the safety of their operators and reduce the risks of COVID‑19 infection and its spread. Food industry food safety management systems include good hygiene practices, cleaning and sanitation, zoning of processing areas, supplier control, storage, distribution and transport, personal hygiene and fitness at work – all the basic conditions and activities necessary to maintain a hygienic food processing environment. As regards COVID‑19 preventive measures in particular, the use of disinfectants and possible other chemicals needs to be carefully assessed so as to ensure that the contamination of products, or interventions putting products produced for human consumption by the enterprise at risk, does not occur.
