dc.descriptionThe UZICKA / ZLATIBORSKA GOVEDJA PRŠUTA (HAM OF UZICE / ZLATIBOR) is a meat product, a kind of smoked beef meat, produced in the district of Zlatibor, exclusively in the Municipality of Čajetina and particularly in the village of Mačkat. It is a unique product that has a long tradition in Zlatibor. Traditionally, the smoked meat of Zlatibor is made with beef and the animals (mainly working animals) used to be 4 to 6 years old before being slaughtered so that the smoked meat gets a strong flavour . The LIVANJSKI SIR (LIVNO CHEESE) was originally a sheep cheese, often associated to the Pecorini family but for which the processing method has been inspired and copied from the Swiss Gruyère cheese. The milk is cooked up to 32°C, the rennet is added and the temperature is then increased up to 47°C. Once the curd coagulates, the cheese maker cuts it and reduces it to the size of a wheat seed. The curd and the hey are then put under press in a towel for one day. The cheese is then immerged in b rine for three days and stored for 60 days minimum on wooden board of Smreka, Jela or Bukva. The TETOVKSI KRAV (TETOVO BEAN) is a traditional bean variety which has been protected in 2006 as a PDO by the Former Yugoslav Republic of Macedonia (FYR of Macedonia) state Office for Intellectual Property (SOIP) by a federation of producers association based in the region of Tetovo, in the North West of FYR of Macedonia. This type of beans is well known all over the Balkans and has an important place i n the traditional culinary and food consumption habits.
