dc.descriptionEste estudio compara los resultados de la Fase I de las dos instancias de la Auditoría Nacional de Calidad de la Carne Bovina llevadas a cabo hasta el momento (2002-03 y 2007-08). Los problemas percibidos por los agentes involucrados en la cadena cárnica vacuna fueron recogidos a través de una serie de encuestas y entrevistas. Los nuevos problemas identificados en la Auditoría 2007-08 se ordenaron de acuerdo a su relevancia. Los respondientes también fueron confrontados con los resultados de la Auditoría 2002-03, donde se las pidió que indicaran si, a su juicio, esos problemas habían mejorado, continuaban igual o habían empeorado durante el período de 5 años entre ambas auditorías. This study presents a comparison of Phase I of the two National Bovine Meat Quality Audits carried out so far (2002-03 versus 2007-08). A list of relevant problems perceived by the agents involved in the beef chain was obtained through a series of surveys and interviews. The new problems identified in the 2007-08 Audit were ordered in terms of their relevance. Respondents were also confronted with the results of the 2002-03 Audit and were asked to indicate whether in their view, such problems had improved, remained the same or worsened during the 5-year period between both Audits.
