The document reports on the proceedings of the FAO Workshop on the Safety and Quality of Water Used in Fisheries, held in Choluteca, Honduras, from 23 to 25 April 2025. The workshop gathered 45 participants from 11 countries, including scientists, regulators, food business operators, and food safety inspectors. Its main objectives were to present findings from Microbiological Risk Assessment reports (MRA 33 and MRA 41), compare “fit-for-purpose water” and “clean water” concepts, train participants in using decision trees developed by JEMRA for microbial risk assessment, validate these tools through exercises and field visits, and support the development of Codex Alimentarius Commission Guidelines for the safe use and reuse of water in food processing.
