dc.descriptionMalnutrition remains a significant public health burden in many low-income countries, characterized by protein–energy undernutrition and micronutrient deficiencies (Majumdar et al., 2025). In sub-Saharan Africa, diets heavily rely on a narrow array of starchy staples (e.g., maize, rice, cassava), which provide calories but lack high-biological-value protein and bioavailable iron, zinc, and vitamin A (Wudil et al.,2022) This dietary monotony, exacerbated by poverty, limited market access and recurrent food insecurity, has resulted in stunting, wasting, neurocognitive impairment and compromised immune function, particularly in children and pregnant women (Zegeye et al.,2025)
